Pikes Hotel‘s in-house restaurant Pamelas, is famous across the island for its 70s-kitsch pantone pink painted walls, with splashes of gold complimenting a ceiling dotted with glittering mirror-balls. The vibe is sexy and glamorous and the 2023 menu will take you on an experiential journey of creative gastronomy. The food concept puts a modern twist on European dishes, continuing to boast locally sourced Mediterranean ingredients. It’s the perfect place for dinner with friends before heading into the hotel’s club space Freddies, or to languish over a deliciously healthy brunch the morning after.
Lancashire-born, Head Chef Tim Payne, an alumni of Marco Pierre-White, with an incredible 36-year career in Michelin-starred kitchens, Tim has appeared alongside his mentor on ITV’s Hell’s Kitchen and independently cemented his reputation as one of the UK’s top chefs through a stint at iconic gastropub Paradise By Way Of Kensal Green among other places around the world and was previously a private chef for DJs Carl Cox and Sasha. Tim describes his own style in the kitchen as ‘level-headed, realistic and precise’.
Starter choices on the Pamelas dinner menu include creamy local burrata with toasted pine nuts, deliciously crispy duck and onion spring rolls and sea meets land with the pincho of octopus and chorizo. On to the mains and seafood lovers can enjoy wild sea bass with braised red peppers, frisse and a herb salad or roast monkfish complimented by a pea puree, beans and pistachios. Meat lovers choose from a tender veal cutlet with creamed mushroom, braised lamb shoulder with braised beans, pluma Iberica with violette potatoes and sauteed prawns or the chicken finished with braised potatoes and girolle mushrooms. Baked aubergines with courgette, red pepper and almond crust completes the menu.
Save room for the deserts, as the menu has a subtle nod to the 70s with staples such as rhubarb and custard and a rich black forest gateaux. The chocolate truffles are a rich and indulgent finisher. And of course it goes without saying, Sunday Lunch at Pikes is one of the most legendary on the island, and is a firm Balearic must-do. Expect the finest meats and veggie options, complete with all the trimmings. Whether you’re rounding out a day by the pool, or setting yourself up for the night ahead, there’s no better way to spend your Sunday afternoons.

An Ibiza-based international chef, food writer and stylist, Tess is passionate about food and with a previous career in London with BaxterStorey saw her consult alongside Yotam Ottolenghi which is where her love affair with Middle Eastern and Mediterranean cooking began.
The collaboration with Pikes delivers a super healthy menu inspired by her worldwide culinary experience. It’s where beautiful food meets rock & roll. Start with a berry banana brunch smoothie made with probiotic kefir, oats and Ibiza almonds, and thenmove on to spicy sticky Korean chicken wings with Asian pickled cucumber salad or for vegetarians try the delicious homemade beetroot burger with flatbread, minted avocado puree and alfalfa. Chicken shawarma is another firm favourite on the Love Food Ibiza menu, inspired by the Lebanese restaurants on London’s Edgware Road where Tess grew up. No menu is complete without a sweet treat – the skinny banana paradise cake, or the homemade olive oil ice cream with blueberry and bergamot are a delicious way to end the brunch experience.
