Pikes Ibiza – May 2022 news
Pikes Ibiza have opened for the 2022 season with some exciting restaurant news. This year they have teamed up with top British chef, Lancashire-born Tim Payne on a new food concept for Pamelas restaurant at Pikes. An alumni of celeb chef Marco Pierre White, with an incredible 36-year career in Michelin-starred kitchens, Tim has appeared alongside his mentor on ITV’s Hell’s Kitchen and independently cemented his reputation as one of the UK’s top chefs through a stint at iconic gastropub Paradise By Way Of Kensal Green among other places around the world. Previously a private chef for DJs Carl Cox and Sasha, Tim was also head chef at Savannah and Can Mimosa in Ibiza.
Tim describes his own style in the kitchen as ‘level-headed, realistic and precise’. On the menu this year will be dishes that are created with seasonal, local produce, combined with an international twist. On the menu will be tasty octopus pintxos with an Ecuadorian chilli sauce, braised pork cheeks with monkfish – a unique take on surf and turf – and a delicious chicken Kiev, (a dish that’s trending on menus worldwide in solidarity with Ukraine). For seafood lovers there will be caramelised fish curry with saffron, lush lobster tacos, deep fried oysters with tartare sauce and plenty of fresh shellfish such as scallops, clams, mussels, langoustines and juicy red prawns. The nightly pizza menu has also had a revamp with some carefully curated new additions including crispy duck and watercress, or the Pages (Catalan for countryside) pizza made with island-made Mozzarella, Mahon cheese, sobrasada and butifarra (local sausages).
Back by popular demand 2022 also sees the dream-team brunch collaboration with Love Food Ibiza and Pamelas at Pikes. The new all-day LA-style brunch menu has been designed by Love Food Ibiza founder and chef, Tess Prince, inspired by her worldwide culinary experience and game-changing food preparation techniques. Beautiful food meets rock ‘n’ roll – which just so happens to be healthy too. Stand out brunch dishes include the Roasted Cauliflower Falafel – the epitome of slow food as it is a three day process. Tofu Satay is another super-popular dish. Tess’s famous chicken shawarma is another favourite on the Love Food Ibiza menu, inspired by the Lebanese restaurants on London’s Edgware Road where she grew up. Sweet treats include Pamela’s Recovery Bowl – an exotic ice cream sundae – 100% sugar-free and vegan made with dragon fruit, the exact same pink pantone colour to match the walls of Pamela’s restaurant.
Founder and chef Tess Prince is an Ibiza-based international chef, food writer and stylist. Passionate about food her previous career in London with Baxter Storey saw her consult alongside Yotam Ottolenghi which is where her love affair with Middle Eastern and Mediterranean cooking began.
Brunch is served at Pamelas close to the back terrace which has been reworked with lifesize illustrations of some of the famous faces associated with Pikes by iconic British artist Blue Logan for Elyx Vodka. There will be a weekly Elyx Brunch with DJs Andy Wilson and Radio Guesthouse (AKA Mark Broadbent from Pikes on Sunday) playing with regular international guests dropping in to share some laid back tunes from 11am until 4pm weekly. The hotel itself was originally created in the late 1970s and has been a playground for the music and film elite with guests including Grace Jones, Tony Curtis, Spandau Ballet, George Michael (who filmed Club Tropicana by the swimming pool) and Freddie Mercury who held his 41st birthday party in what is now the nightclub ‘Freddies’. Pikes have also hosted regular events at Soho House and the Groucho Club in London and last year held several glamping events at Somerset’s Marston Park.
