Last year Donna Lennard, owner of New York’s world-famous two restaurants il Buco and il Buco Alimentari & Vineria located in Noho, announced the opening of their third restaurant, Bottega il Buco in Ibiza.
Situated just off the pretty square of Santa Gertrudis, one of the oldest towns in Ibiza, the restaurant has been open for just over a year and already is proving to be one of the game-changing restaurant experiences for those in the know, as well as the go-to place for international visitors to the island.
Bottega il Buco provides a gastronomic experience unique to Ibiza, and is designed to take you on an unforgettable journey of authentic culinary discovery. The NYC/Italian dining concept is based on a curated selection of simple but beautifully prepared food, using the highest quality ingredients from local artisan producers, alongside individually sourced products from Italy.
The daily menu includes wooden sharing boards of salami, cheese and anchovies accompanied by delicious freshly baked focaccia using ancient Triticum Durum whole grains from Sicily. Dishes are pared with some of the best boutique biodynamic and organic wines in Europe from small producers in Spain, Italy and Portugal, hand-picked by Wine Director Roberto Paris, who has shaped the brand’s wine vision for over twenty years in the USA.
The kitchen is spearheaded by prodigy Executive Chef Tiago Borges who trained under star luminary chefs such as Mark Neilson from Denmark and Juniper Hill’s Josh DeChellis from the USA. Today, Chef Borges exerts his creativity and refines his simple technique using both Ibiza’s local ingredients and il Buco’s imported staples. He specializes in simple fish crudos, rich pastas, market driven entrees and unique desserts.
On the menu choose from fish ceviche and crudo, oven-roasted garden vegetables, salads, and a daily hot entree from the oven such as a bacala or vegetable lasagne. For dessert there are Italian fruit and nut cakes as well as the signature il Buco classic panna cotta with aged balsamic. The menu is adapted according to season but is inspired by simple, local and seasonal ingredients.
As well as booking a table at il Buco for lunch or dinner, you can also pop in to buy the best groceries on the island. One side of the restaurant’s interior is dedicated to the ‘Alimentari’, featuring delicious charcuterie, cheeses, cured and smoked fish and pickles from Italy, Spain and Portugal. The walls are lined with wooden shelves filled with olive oils, salts and balsamic vinegars and colourful tins of anchovies and sardines. You can purchase everything by weight to take home. Or indulge in some irresistible fresh foccacia baked with a variety of delicious toppings for the ultimate beach picnic. Bottega can arrange catering orders and design private events and you can book the whole restaurant for a celebration or private dinner.
The restaurant’s interiors have been designed as a natural extension of Donna’s NY lifestyle brand, il Buco Vita, reminiscent of a super-stylish New York up-scale delicatessen that provides a relaxed, informal yet intimate ambience. Tableware is gorgeous artisan custom-made Italian crockery in azure-blue with a retro-design feel. Bottega il Buco has seating for 24 guests around vintage painted tables decorated with small vases filled with wild flowers and over 30 guests can be seated on the terrace outside. The restaurant is the perfect place to sit and watch the world go by under the Mediterranean blue skies.
The inspiration for the Ibiza restaurant came from Donna’s original partner Alberto Avalle, who spotted that the restaurant’s venue was for sale. Knowing Donna’s passion for Spain he alerted her immediately. “Alberto and I created the original il Buco on Bond Street NYC together nearly 25 years ago’ said Lennard. ‘With il Buco’s original roots firmly planted between Italy and the Iberian Peninsula, this felt like a homecoming for the brand. I can’t imagine a better way to mark our silver anniversary than bringing our story full circle in building Bottega il Buco together’.

The Il Buco Story
The il Buco story began 25 years ago in NYC on cobblestoned Bond Street in 1994, when Donna Lennard and Alberto Avalle opened an antique shop, which quickly morphed into one of the most enchanting restaurant destinations in NYC. As visitors started to join Donna and Alberto for lunch in the back of the shop, the store organically transformed into a charming Mediterranean-Italian restaurant. Today, il Buco is one of the most beloved restaurants in NYC, with a host of celebrity fans including Bradley Cooper, Angelina Jolie and Jennifer Lawrence.
The success of il Buco came from its primary vision – to share a quintessential knowledge of food and tradition with communities of people. On one side, there is Alberto, a true Italian Renaissance man with an unmatched commitment to sourcing and discovering the best quality food the Mediterranean has to offer. On the other side, Donna Lennard (originally a filmmaker), a master of production with unrivalled taste and tenacity for perfection and creation. Since the 1994 opening of il Buco, Alberto returned to Italy, but continues as il Buco’s chief ingredient and product sourcer, while Donna has remained at the helm in New York.
In 2012, Donna expanded her vision with the opening of il Buco Alimentari & Vineria, a market and restaurant on Great Jones Street in New York’s Noho neighbourhood. The Alimentari is complete with its own in-house bakery, cafe, and salumeria, combining the rusticity of il Buco’s dining experience with its built-in market. The market provides a fundamental piece of Donna and Alberto’s original mission: to create a place where customers can learn about the food and its sourcing but can also bring a piece of the restaurant home. Plus, with an immediate 3-star review by The New York Times, the Alimentari was the perfect encore to the original il Buco.
In 2015, Donna brought the brand full circle when she teamed up with Lorenzo and Antonelo Radi — two dear friends of hers and Alberto’s from Umbria — to create il Buco Vita, a home line of handcrafted Italian artisan ware. Sourced in central and southern Italy, the il Buco Vita line is a reflection of the ambiance and dining experience she and Alberto have created for the guests in both restaurants.
Chef Tiago Borges – Biography
A Portuguese native from the small island of Faial in the Azores, Chef Tiago Borges is a young, energetic, and enthusiastic chef with an eclectic cooking background.
Chef Tiago began his culinary studies at the Azorean Escola de Formação Turística e Hoteleira (EFTH) where he intensely studied the modernist cuisine with a focus on pastry. He learned from star chefs from around the globe including Mark Nielson from Denmark and Josh DeChellis from the United States, whom he met during a culinary event in Portugal. After graduating from culinary school, Chef Tiago went on to work for DeChellis through the opening of his newest restaurant venture, Juniper Hill, in Clinton, NJ. In fact, DeChellis had been the previous Executive Chef of il Buco Alimentari & Vineria in New York City (sister restaurant to Bottega il Buco), and he introduced owner, Donna Lennard, to his newest prodigy, Tiago Borges. Borges was part of the opening team at Bottega when the restaurant opened in 2018, then spent the winter months with the il Buco family in Italy during the off season to hone his Italian cooking and to learn the art of bread making with Luisa Scolastra at Villa Roncalli in Foligno, Umbria. Today, Chef Borges exerts his creativity and refines his simple technique using both Ibiza’s local ingredients and il Buco’s imported staples such as its Italian olive oils, salts and vinegars as well as Sicilian ancient grain flour for bread and focaccia making.
